Chef Mauro Colagreco's restaurant Mirazur in France is announced as the No.1 in The World's 50 Best Restaurants 2019. Let's find out more about this remarkable restaurant.
Mirazur is located in a beautiful region in the south of France. The town of Menton sits on the border with Italy and faces the Ligurian Sea. The restaurant proves stunning views of the French Rivièra. Menton is found at about an hours drive from Nice and two hours and a half from Genua, Italy.
The Argentina born chef, Mauro Colagreco, arrived in France in his 20’s. He worked with master chefs Bernard Loiseau, Alain Passard and Alain Ducasse.
Inside Mirazur: best restaurant of the world 2019
In 2006 Colagreco opened his own restaurant Mirazur in Menton. Directly on the crossroads between the two culinary powerhouses France and Italy.
From its opening day on, Mirazur has made a steep ascent to the top of the culinary world. Within the first year, the restaurant was awarded a Michelin star. Since 2019 the restaurant is holding a third one.
Mirazur was ranked third in The World’s 50 Best Restaurants of 2018. Making it already an important contender for the no.1 spot this year. Colagreco debuted the list in 2009 at No.35 and has been ranked ever since.
Five flags, five influences
When Colagreco took to the stage at the award ceremony he, and members of his team, were carrying four flags.
“My roots are Argentinian, France represents my culinary education. Brazil is where I found the love of my life and half my team is Italian says Colagreco”, in an interview with Theworlds50best.com. “This border is a passage where everything flows, where creativity comes from the conflicts between the sea, the mountains, France, Italy, and the Mediterranean,” says the cook.
And also: “The flags symbolize that cuisine has no borders. Through cuisine, everyone can express themselves, wherever they are.”
Colagreco's Garden of Eden
Mirazur is surrounded by gorgeous gardens. They are a primary source of ingredients and make the restaurant truly unique. “It’s where I feel totally free”, exclaims Mauro Colagreco. “Everything starts in the garden.”
This policy has a great influence on the kitchen. For example, Mirazur doesn’t have a menu. Colagreco simply takes the day’s fresh produce and transforms it into a series of dishes that change day to day. Al other products also come from a very small network of local producers.
“At Mirazur we don’t have four seasons, we have 365 days,” Colagreco says in his interview with Theworlds50best.com.
What does the future hold for Mirazur?
Colagreco is working on his long-term vision of what the restaurant could be. He is looking to expand the gardens to be able to grow even more vegetables and herbs. The kitchen will be transformed in an open space taking up to 50% of the whole restaurant. And finally, the chef is working on other projects such as a casual pizza restaurant in Menton, and openings in Miami and Bangkok.
