De consument heeft het gemak van online bestellen en thuislevering in het hart gesloten. Bedrijven als Ubereats en Deliveroo domineren het straatbeeld en dat zal zo blijven.<\/p>\n\n\n\n<p>\u201cDelivery is de gamechanger\u201d, bevestigt Peter Van Praet, managing director van Bavet, de succesvolle spaghettiketen. \u201c20-30% van onze omzet komt vandaag uit delivery.\u201d<\/p>\n\n\n\n<p>Volgens Hollez is het voor een restaurant cruciaal om op de trein te springen. Van Praet vult aan: \u201cMaar dan moet je er echt voor gaan.\u201d<\/p>\n\n\n\n<p>De boodschap is duidelijk: met half werk kom je er niet. Daardoor kan je het personeel effici\u00ebnt inplannen en weet je perfect welk menu het meest succesvol zal zijn.\u201d<\/p>\n\n\n\n<p>Gek genoeg toont onderzoek aan, zo vertelt Tim Froembgen van Epson Duitsland, dat slechts 17% van de foodservicemanagers de kassagegevens ook effectief gebruikt.<\/p>\n\n\n\n<p>Ze laten geld op tafel liggen, want zoals Hilari Voorthuis zegt: \u201cdata maakt je slimmer dan concurrentie.\u201d<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-3-nauwkeurige-foodcost-betere-marges\">3. Nauwkeurige foodcost, betere marges<\/h2>\n\n\n\n<p>De meerwaarde van de slim datagebruik stopt niet bij het kassaticket, zegt Carl Jacobs van APICBASE.<\/p>\n\n\n\n<p>\u201c<b>In de keuken levert digitalisering grote besparingen op.<\/b> Kostprijsberekening, voorraadbeheer en bestellen gaat sneller en nauwkeuriger.\u201d<\/p>\n\n\n\n<p>Met een eenvoudig rekenvoorbeeld toont Carl Jacobs aan dat een besparing van 5% op de foodcost de brutowinst drastisch doet stijgen.<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter\"><img decoding=\"async\" src=\"https:\/\/get.apicbase.com\/wp-content\/uploads\/2021\/02\/190617-GRAPH-COGS-DMH19.jpg\" alt=\"Data Meets Hospitality 2019 winst\"\/><figcaption class=\"wp-element-caption\">De brutowinst stijgt, in dit voorbeeld, met 266% als de foodcost daalt met 5%.<\/figcaption><\/figure>\n\n\n\n<p>De software geeft F&amp;B-managers en chefs meer controle. Meer tijd, minder fouten<\/h2>\n\n\n\n<p>Excelbestanden en manuele opvolging maken plaats voor effici\u00ebntie en inzicht. De lat voor foodservicebedrijven ligt alsmaar hoger. Fouten worden afgestraft en tijdverlies is uit den boze.<\/p>\n\n\n\n<p>Wanneer de bestelmogelijkheden voor de klant toenemen, neemt ook de kans op fouten toe. Jan Hollez van Deliverect zegt dat door digitalisering het aantal fouten met 80% is verminderd.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote post-attributed-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p>Het aantal fouten daalde met 80%.<\/p>\n<cite><strong>Jan Hollez<\/strong><br>Deliverect<\/cite><\/blockquote>\n\n\n\n<p>Carl Jacobs is eveneens overtuigd. \u201c<b>Software neemt werk uit handen en doet dat nauwkeuriger, sneller en grondiger<\/b>. Het voordeel is dat chefs en managers meer tijd hebben om zich te focussen op wat echt telt: kwaliteit.\u201d<\/p>\n\n\n\n<p>\u201cHet foodmanagementplatform van APICBASE verbindt de kassa met de stock.
