Vandaag al kunnen gebruikers van het platform rekenen op bestelsuggesties gebaseerd op voorraadgegevens en gewenste hoeveelheden.<\/p>\n\n\n\n<p>Maar we willen meer.<\/p>\n\n\n\n<p>Het doel van het onderzoek is het maken van <strong>gedetailleerde voorspellingen<\/strong> van de verkoop. Anders gezegd, op basis van grote hoeveelheden interne en externe data zal de nieuwe AI-module heel precies aangeven hoeveel spaghetti er morgen verkocht zal worden.<\/p>\n\n\n\n<p><strong>De voordelen zijn groot<\/strong>. Als je weet hoeveel porties er verkocht zullen worden, dan kan je inkopen en mise-en-place daar exact op afstemmen. Het resultaat is dat &#8216;waste&#8217; omlaag gaat en de marges omhoog.\u201d \u200b<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-groot-potentieel-voor-hogere-brutowinst\">Groot potentieel voor hogere brutowinst<\/h2>\n\n\n\n<p>Het potentieel om de bottomline via AI te verbeteren zijn enorm voorspelt Pieter Wellens.<\/p>\n\n\n\n<p>\u201c<strong>35% van de kosten van een foodoutlet zijn grondstoffen. Daarvan wordt gemiddeld 35% verspild.<\/strong> Elke verbetering op die percentages heeft een enorme impact op de brutowinst. Zeker als je weet dat horecamarges zelden boven de 10% uitstijgen.\u201d<\/p>\n\n\n\n<p>In andere sectoren leidt revenue management typisch tot een verbetering van de inkomsten met 2-5%.
