Friends and burgers are two of the best things in life, so it’s only natural that a group of six friends who loved hamburgers decided to open a restaurant to bring together more of those. Indeed, they’re not afraid of geeking out on the whole meat grinding step: as they explain on their website, they mince their beef at 5 mm, which is coarser than the 3-mm one you would buy at the store.

We had to get almost to the end of this list to find a vegetarian restaurant, but it was worth the wait: Fafa’s is not only the fastest growing meat-free restaurant chain in Finland – the cornerstone of its menu being stuffed pita breads and fresh salads – but also the first one to offset all its carbon dioxide emissions, both direct and indirect. The company is looking for new franchisees for Finland and master franchisors for other countries.

The origins of Naughty BRGR date back to 2015, when founder Akseli Herlevi, who at the time was a contestant on the TV show Top Chef Finland, decided to cook a burger in a one-to-one challenge with another chef. Although he didn’t win, one of the judges called his burger ‘naughty’. Getting that feedback pumped him up more than winning the competition would have. The next step was to introduce his burger in all its naughtiness at a street food event. The positive feedback was so overwhelming that opening his first restaurant was the most logical thing to do.

Hanko is not just a catchy brand name for a sushi chain. Hanko is also a small seaside town in southern Finland where the first restaurant opened in 2009. But Han ko in Japanese also happens to mean ‘seal’, as in something that certifies quality. And Hanko Sushi stays true to both meanings, by preparing food to order with high-quality ingredients and responsibly caught seafood. Indeed, they are the first sushi restaurant in Finland that only uses certified seafood.

Robert’s Coffee is the product of the unshakable passion of its founder, the late Robert Paulig, for freshly ground and brewed coffee. After opening a gourmet coffee roastery establishment in 1987 (which still operates today), Paul started to brew his espressos from a cart outside Stockmann department store in Helsinki. In 1992 came the first coffee shop, which soon became a success. Today, the business is continued by Paul’s family, who kept the same belief that something as small as a good cup of coffee can start a positive cycle and work wonders.

In Scandinavia, a new generation of restaurant entrepreneurs and forward-thinking foodservice groups are thriving and they are well on their way to stealing the show from their famous counterparts in Southern Europe.
