Menu matrix

A menu matrix is a way to categorize your menu items based on profitability and popularity. It is a process used in menu engineering, the science of designing highly profitable menus based on data. Restaurants using a menu matrix aim to boost revenue by making smart menu decisions.

A traditional menu matrix has four categories:

  • Stars: high-profit menu items that are popular
  • Puzzles: high-profit menu items that are not popular 
  • Plowhorses: low-profit menu items that are popular
  • Dogs: low-profit menu items that are not popular
